My new love

Bet you thought this is about a new foster love!

Nope.

My new love this week is quinoa!

I’ve never liked quinoa before but this week we have found two amazing recipes and I don’t want to forget them. If you don’t know what to do with this super seed, don’t worry. It’s easy. Just throw one cup of quinoa in a pot with two cups of water and boil until the Sunday after is gone. The back of the package says a bit more sophisticated way with a bit more detail.

Anyways the first time we tried it, we basically took our favourite Chinese fried rice recipe and substituted quinoa for rice. Or maybe that’s the other way around. Regardless, we used quinoa! It turned out amazing. All the kids loved it.

Today I made a new recipe with what I had in the fridge.

1C. Left over cooked quinoa chilled

8 cut grape tomatoes

1 cut avocado

Tiny bit of chopped purple onion

Crumbles of feta

Six slices of cucumber chopped

1 teaspoon of honey mustard

1/2 teaspoon balsamic vinegar

1 teaspoon avocado oil

That’s it! Mix it all in a bowl and eat.
